Sea Scallops-Caramelized

These scallops are the best I've ever made/had. 

What you need: 
Medium Skillet
Tongs

Ingredients needed:
Large fresh sea scallops (about 1/2 pound to 3/4 pound) 
1/2 fresh lemon
Sea salt
Black pepper
Paprika
Parsley

To start, firstly you need to prep your skillet. Preheat the skillet to med-low temp on your stovetop and have a shallow coating of extra virgin olive oil. 

Season the scallops with sea salt and pepper (no measurements needed, you should be a judge of how salty/peppery you like your food). 

Dust the tops of one side if the scallops with paprika. Place them in the hot skillet seasoned side down. 

Once the edges of the scallops are Caramelized, add the juice if the half of lemon to the cooking scallops (this will help mask the "fishy" taste). Increase the heat to high and flip the scallops over with tongs, dash parsley over tops.  Cover skillet with lid and cook for 1 minute and immediately remove from heat. 

Make sure scallops are fully cooked. Should not be mushy (not cooked enough) or rubbery (cooked too much). 
You don't want to consume raw seafood.  

Served mine with brown rice and sautéed baby bell mushrooms and fresh broccoli!
